FORGOTTEN EATS

long ago i used to eat these all the time. they're muy delicioso and i miss them. after a little web digging i found a recipe that seemed to resemble the breakfast burrito (BB) i used to get from 'susies' which was down the street and around the corner from this crappy company i used to work for in Hollywood.
anyway, if you've never had a "BB", find these ingredients and whoop yourself up a few...you won't be sorry...trust me. here are the details:
Breakfast Burrito2 strips bacon, diced
1 cup frozen hash browns
1 small red potato, cooked
1 tablespoon chopped onion
2 eggs, beaten
1/8 cup cheddar cheese, grated
dash salt
dash pepper
3 flour tortillas, heatedFry bacon in a small pan until very crispy and there is hardly any fat. Remove from the pan, and set aside. Drain off all but about 1 tablespoon of the bacon fat. Put the hash browns, potato and onion into the pan and cook. Add salt and pepper to taste. Stir occasionally until the potatoes are nicely browned. Pour the eggs over the potatoes and cook. Stir until almost set. Toss in the cheese and bacon. Stir. Scoop into warm tortillas and roll to form a burrito. Serves 3.
get stuffed and try not to think about the fact that the US govt is turning the world into a prison. i'm off to the store because i'm having one of these tomorrow for breakfast. can't wait!
**update: there she is. it/they (i had two) was/were pretty freakin good. needs a touch of refinement but i'm on the right path for sure.
